Soft, fluffy applesauce pancakes for babies, made with fresh grated apple for added flavor and texture and applesauce for tendernessand added moisture. The cinnamon-spiced batter with oat flour is naturally sweetened and can be whipped up in under 15 minutes. These apple pancakes are perfect for baby-led weaning as a breakfast finger food (or lunchbox), and you can freeze extras to toast later for quick, time-saving meals.
1/2cup all purpose flour(or whole wheat, or other favorite flour)
1/4cupoat flour(ground rolled oats /oatmeal)
1largeegg
3/4tspbaking powder
1/2tspcinnamon
1/6tspnutmeg(optional)
For Older Kids And Toddlers, Add:
1/8tspsea salt
2tbspmaple syrup

Step. 1 Make The Pancake Batter:
Prepare the ingredients – grind the oats/ oatmeal into flour and grate the apple. You’ll need just one apple (on the smaller side).
In a large bowl, combine the applesauce, egg, and the grated apple. Mix to combine. In the same bowl, sift together the flours, baking powder, cinnamon and nutmeg. Add maple syrup and salt if your baby is older than 12 months.
Stir just until everything combined. If your batter turned out very thick, add 2 tablespoons of water. Oat flour tends to absorb a lot of liquid.
Step. 2 Cook the pancakes:
Heat a lightly oiled griddle or frying pan over medium heat. You can use ghee, coconut oil, avocado oil or butter as fat for frying. If you want to cook the apple pancakes without oil, use a ceramic non-stick skillet.
Scoop the batter onto the skillet, using approximately 2 tablespoons for each pancake. Brown on both sides for approximately 2-3 minutes and serve.
Notes
Gluten Free Applesauce Pancakes: use gluten free rolled oats for making the oat flour, and substitute the all purpose flour with a gluten free flour mix. If you don’t have multiple gluten free flours, the next best option is to use buckwheat flour.
Use organic rolled oats to grind into flour - for less pesticide exposure for your baby.
Choose sweeter apple varieties (like Fuji or Gala) if you're not using any sweetener.
