Fluffy Soft Apple Pancakes For Baby / Toddler BLW Friendly Recipe
Moist fluffy apple pancakes for baby with a nice texture and flavor from fresh grated apple. The naturally sweetened cinnamon batter is quick and easy to whip up in just under 15 minutes. Make these apple pancakes for baby led weaning as finger food for breakfasts and freeze the extra so you could just pop them in the toaster when you’re short on time.
1/2cup all purpose flour(or whole wheat, or other favorite flour)
1/4cupoat flour(ground rolled oats)

Step. 1 Make The Pancake Batter:
Prepare the ingredients – grind the oats into flour and grate the apple. You’ll need just one apple (on the smaller side).
In a large bowl, combine the apple sauce, egg, and the grated apple. Mix to combine.In the same bowl, sift together the flours, baking powder, cinnamon and nutmeg. Add maple syrup and salt if your baby is older than 12 months.
Stir just until everything combined. If your batter turned out very thick, add 2 tablespoons of water. Oat flour tends to absorb a lot of liquid.
Step. 2 Cook the apple pancakes:
Heat a lightly oiled griddle or frying pan over medium heat. You can use ghee, coconut oil or butter as fat for frying. If you want to cook the apple pancakes without oil, use a ceramic non-stick skillet, I love mine!
Scoop the batter onto the skillet, using approximately 2 tablespoons for each pancake. Brown on both sides for approximately 2-3 minutes and serve.
Gluten Free Apple Pancakes: use gluten free rolled oats for making the oat flour, and substitute the all purpose flour with a gluten free flour mix. If you don’t have multiple gluten free flours, the next best option is to use buckwheat flour.
