There are many ways to prepare carrots for your baby, you can either opt for a simple carrot puree or serve carrots as baby led weaning, it’s up to you.

For an easier digestion I would probably opt for a carrot soup. The broth is really soothing for an upset stomach.

And for fun days, you can incorporate the vegetable into baked goods such as these carrot muffins. And if you have some cooked carrot leftovers, make a grated carrot salad for your kid.

Carrot Soup Recipe

Making soups is a great way to introduce new foods to your baby or toddler. Carrots are a nutrient-rich food growing bodies. This soup is easy to make and can be tailored to your little one’s preferences.

Ingredients You Need:

  • Carrots – opt for organic carrots. Root vegetables tend to absorb all pesticides from the soil.
  • Onion – yellow onion (or red, but it will change color of the soup a bit);
  • Garlic – optional for extra flavor;
  • Butter / or oil (to sear the onion) the fat also helps the body to absorb vitamins from carrots;
  • Chicken stock (or vegetable stock or fish stock) – for flavor, taste and it will provide extra nutrients;
  • Water – to increase volume and dilute the stock;
  • Lemon juice – to add some tanginess (optional);
  • Salt and pepper (optional) – add for older babies (12 months+).

Instructions:

  1. Peel and chop the carrots into small pieces. Chop the onion and garlic.
  2. In a deep wall pot, sauté the chopped onion and garlic in oil/butter until tender.
  3. Add the carrots, stock, and water to the same pot and bring to a boil. Add a bay leaf for extra flavor. Reduce heat and simmer gently for 20 minutes or until the carrots are soft.
  4. Season with salt and pepper to taste (optional), taste and see if you like to add some tanginess – the lemon juice.

5. Allow the soup to cool slightly, then blend into a smooth soup like consistency.

6. You can either use an immersion blender to blend the carrot soup or transfer it to a regular blender. Just make sure your soup is not hot. Hot liquids tend to alter the plastic blender pitchers. Therefore I’m using a blender with a glass pitcher.

  • Celery
